Stuffy Class: Food Service Division

 Hello Stuffy World.

Little Fox here. I'm enjoying a nice afternoon at the beach.  This weeks stuffy class is a little different.  As you know we have many instructors at stuffy class.  Fortunately, they work for free so as a good administrator I always make sure my team is fed. 

Hello friends.  My name is Young Fox and I am one of the newest foxes here at the house.  I am in charge of feeding the guest lecturers at Stuffy Class.  Today, I am working on some fresh salsa.

Step 1: I am washing the class "B" tomatoes from the garden.  What's a class "B" tomato?  They are the ones with imperfections, spots, and dents but they still taste good.
Fresh onion from the garden.  Just need to get the dirt off.
The tomatoes are dry.  Now they are ready to be processed. 
I have most of my ingredients in the food processor.  The trick to making salsa for a large group of people is to use a food processor to grind up the tomatoes, cilantro, onion, garlic, and jalapeno.
I need some lime.  I had to ask my pal Drunk Fox to help me with the limes.
Um.  Looks like Drunk Fox needs a nap.  I know what will wake him up.

Fresh chips and homemade salsa.  This ought to keep the guest lecturers happy for awhile. 
Of course stuffies can't live on salsa alone.  Let's see what else I can make? I have baking soda, whole wheat flour and regular flour.  I also have some over ripe bananas and chocolate chips.  I bet I can whip something together. 
Voila.  Banana muffins. 
Drunk Fox wanted to get his spot near the muffins.  
Funny how fresh muffins bring all the stuffies out. 

I hope my fresh salsa and homemade muffins are acceptable to our teaching staff at Stuffy Class.

Sandy Says Goodbye.

Sandy here.  It's time for me to start packing up and get ready for my next adventure.  The Oregon stuffies have been so helpful and outgoing that I wanted to take some time and make them a healthy dinner.  

My dinner starts off with quinoa.  According to the packaging quinoa is a super food.  
You can't go wrong with  corn on the cob.
LF mentioned that the easiest way to cook corn on the cob is on a fire, but we don't have a firepit like I do in Canada so we'll use the bbq.

The corn is ready.  I hope LF and gang doesn't mind if I use rotisserie chicken instead of farm fresh chicken.  This bear is an expert on cooking brats, eating salmon and enjoying a good beer but cooking chicken isn't in my skillset.....yet that is. 
LF is impressed with my knife skills. 
Time for Sandy's secret chicken sauce: Salsa,  chipolte pepper paste, lime juice, salt, pepper, and cumin.
Cilantro.  Some people love it.  Some people can't stand the taste. This bear loves it, especially since it's mixed on top of the quinoa. 
The gang is assembled and we have said all of our goodbyes.  You'll notice Big Bear is wearing his Hawaiian lei.  Big Bear always puts his lei on in the summer in honor of the teachers who worked hard all school year. 
Enough chit chat.  Let's eat!

A few treats for Jerry and Ben

Hello Blog Pals,
Little Fox here.  I was thinking about my friend Jerry and how he offers to taste everything yet nothing ever gets sent his way (or stuff does get sent his way and he scarfs it down before he can post about it).  
I thought he might like from brownies.  I know that chef Ben probably makes all sorts of treats for Jerry but I hope this boxed mix is acceptable for Jerry.
My roommates did the heavy lifting and mixed the brownies (and prepped the pan) while I worked on the post.  Now, the hardest part.....waiting for the brownies to be done.

 I always stick a knife in the brownies to see if it comes out clean.  Yep, looks good to me.
Tom Petty said "The waiting is the hardest part".  He was so right.  Just waiting for them to cool so I can have one.....umm I mean so I can pack them up for Jerry.
My packing material is ready. Just need to fill it with brownies. 
Hmm, these brownies didn't come out as clean as I wanted them but I am sending them off anyway.  I hope Jerry (and Ben) enjoy them.

Reindeer helps out....

Hej kompisar,

Drunk Fox here!  As mentioned earlier in the week Little Fox gave me the keys to the blog so I thought I would share a little more about myself.  One of my hobbies is answering crossword puzzle clues that people send to me in the mail but I also want to share another hobby of mine...cooking.
Have any of you used this device in your cooking?
Now, I admit that I am no Ben or Sandy in the kitchen and I certainly don’t have the pallet that Jerry does but I wanted to share with you what I have eaten everyday since I retired from IKEA.



For breakfast I have some creamy peanut butter on brown bread.
For lunch I change up my diet and have crunchy peanut butter on non-toasted bread.
Dinner?  This is where I get my variety.  I have Crunchy and Creamy Peanut Butter on Buttermilk bread.  If I have the time I toast it, if I don’t have time I don’t toast it.  
Reindeer can I make you a sandwich?

Yep, I consider myself a pretty good cook.

Reindeer: Umm, Drunk Fox don’t take this the wrong way but you could improve your diet a little bit.

Drunk Fox: Reindeer, I think you are wrong.  Peanut Butter is one of the best things to eat.  It has protein, vitamin E, and potassium.

Drunk Fox: Ok, I have been craving something with Goat Cheese and Orzo.  Any suggestions Reindeer?

Reindeer: I have an idea.  Let’s get to work.

Reindeer: OK Drunk Fox take the knife and start chopping the orange pepper.  Many of my meals start off with some vegetables.  
Reindeer: Next you need to boil up some Orzo.
Drunk Fox:  Cooking pasta, that seems hard. 
Reindeer: Mix the pasta, peppers, and chicken up in the bowl. 
Drunk Fox: Why do we need lemon?
Reindeer:  I use a little lemon to keep the pasta moist and add some brightness to the dish.
Drunk Fox: Huh.


Reindeer: The last step is to add the goat cheese.  This is a special goat cheese all the way from California.  
Drunk Fox: Wow Reindeer, you are a great cook and I have to admit it's a nice change from my usual routine of peanut butter sandwiches.  What is on the menu for tomorrow?
