Stuffy Class with Baxter (aka Baxter's Back!)

Little Fox here:  Welcome to my first of many Stuffy Class sessions hosted by my stuffy friends.  Up first we have Baxter who is going to teach us all about desserts.  Take it away Baxter. 


Baxter here.  I am one of the stuffies at Little Fox's place and this week I am in charge of the blog as a guest blogger for Little Fox's Stuffy Class Series.   Me, I'm getting very excited as my favorite season is coming up.  Summer? Well sort of, it's ICE CREAM and DESSERT SEASON.  I am a big fan of ice cream and cookies anytime anywhere!  Welcome to my Stuffy Class!


Step 1:  For my ice cream you need frozen bananas.  I have been tasked with preserving these bananas that are starting to go bad.  I had the roommates cut them up and I  put them in a tupperware and lined them with wax paper.  I plan to freeze them.  Note: Not the best idea to separate the bananas via waxed paper as the bananas stick to the paper.  Next time I will just freeze the chunks in ziplock bags.
Step 2: Ice cream is really good but one would also need cookies to fully enjoy the experience.   Okay, any cookie aficionado can see that this is just the frozen dough bought from the grocery store but it should still work for what I want to do. I hope Chef Ben, doesn't  judge my baking skills.  
The cookies are done....well sort of.  I think they need to be baked a little more and put in the traditional cookie shape of circles.  Back in the oven for you. 
Yes, these look like proper cookies.  Now they just need to cool down.

The bananas are properly frozen so let's get to work.  
Step 3: Get some frozen strawberries.  So I have frozen bananas and strawberries to build the base of my ice cream.  
Step 4:  The food processor is out and ready to get to work.  
Step 5: Add some liquid. Cream works, half and half works but today we are using almond milk.  
Let's recap: Frozen bananas, frozen strawberries, food processors and almond milk.  Time to get cooking!  Put all the ingredients in a food processor and give it a whirl.  Eventually it will look like this tasty treat.

Of course there is no cream but hey it tastes pretty darn good.  Do you think this bowl of "ice cream" is big enough for me?  Perhaps I should get some of those cookies from earlier to accent my ice cream?

Bear mail

Hola Amigos.
Little Fox reporting from an exotic locale.....no just kidding. I’m obeying the stay at home orders and staying at home.  I did get some mail recently. It’s from Sandy up in Canada.
Sandy really sends a cool letter. Personalized address label, custom stamp and a  few stickers.
Let’s open this up and see what he has to say.  First, a nice card with pigs on it. They look content.
A friendly message from Sandy. He is struggling with the stay at home order as well. Looks like no adventures or hiking  for Sandy. Just like me little fox I’m stuck at home too. Sandy has some picnics on the horizon, a few walks in a local park, and a little bit of shopping.
 

You might notice there’s a lot of stickers here. Apparently  Sandy is also cleaning out some old files from grandmas house and  gramma had LOTS of stickers.

I forgot to mention there’s also stickers on the back of the envelope. My pal drunk fox thinks that we should count the stickers and take a shot of vodka for each time we find a sticker. Well we’re not doing the vodka thing… Because of drunk fox you know… But I did count up and noticed that there were 15 stickers if you include the stamp. Hopefully that cleared up some of the stickers from grandmas cache.  Sandy if you’re looking to use more of the stickers from grandma, might I suggest A paint by sticker kit or sending a grandma a letter with all of her stickers back on it.

Thank you for the nice letter, it was a good distraction from our stay at home activities of work ,walking Sequoia and cooking.

Waterloo

Hello Blog Pals,
My roommates told me to pack my bags for a quick adventure to Waterloo.  I know two things about Waterloo.  First, Napoleon had some trouble there and the band ABBA had a hit song.
Actually, my roommates decided to take me to Waterloo, Oregon.    It's a small town with great river access and I heard that there is  local rancher who sells farm fresh eggs for $3.00 a dozen.


There is some good hiking out of Waterloo as well.  Right now (post dated blog) it's huckleberry season.  The huckleberry is a relative of the blueberry and they have not found a way to commercially produce. them.  They are very good and when you find them in the wild be sure to enjoy a few.
The darker the berry the tastier it is.  There are also blue huckleberries but a certain roommate spent more time eating them than taking pictures of me with them.


There is still some beargrass out.  Although it is getting to the end of the beargrass season.  

Nice mountain views along the way.  
Ahhhh, the Oregon Cascades. You can see a few mountains.  I see the three sisters, broken top and black butte off in the distance.  
This looks like a great place for lunch.  Of course, everyone was eating so no pictures were taken of the lunch.  Humans, am I right?

My hike yesterday was to Crescent Mountain and our host suggested visiting the waterfalls at the McDowell County Park.  Another hike?  Yep, I am in.  This was more of a walk than a hike but the waterfalls were cool.
I call this one Little Fox falls.
Another waterfall, let's call this Little Fox falls #2.

What?  Another waterfall.  Okay, Little Fox falls #3.  

Time for this fox to visit the farm and get some fresh eggs for dinner.

Happy Spring

Hi Blog Pals,
I just wanted to wish everyone a happy spring.

Today's adventure includes a trip to Dry Creek Falls in the Columbia River Gorge.
Dry Creek Falls is the watershed for the small town of Cascade Locks.  I hope there is water as I want my friends in Cascade Locks to have lots of fresh water.  Enough talk, let's hike.
As I am approaching the falls the river looks like it's flowing well.

Do you see the waterfall in the background?  Let me get closer....
I am no hydrologist but this waterfall sure looks good to me.  I think my friends are going to have lots of water this year. 
Who are my friends in Cascade Locks?   Of course we have the Native American's who sell smoked salmon and fresh salmon (in season) under the bridge out of the back of their pickups.
There is also the Brigham Fish Market.  They have all sorts of fish, some local.  I recommend the smoked salmon at either place.
Wild smoked salmon.....worth every penny.
One more place I recommend in Cascade Locks.  
I have never had the burgers but the ice cream is pretty darn good.
